  • For 4 bites:
  • 1 slice brioche 3 cm thick
  • 2 apricots
  • 1 knob of butter
  • 1 egg
  • 10 cl of milk
  • 1 sachet of vanilla sugar
  • 1 C. tablespoon caster sugar
  • 2 tbsp. flaked almonds
  • Butter.


Brown the almonds dry in a pan and set aside. Wash the apricots. Cut them in half, remove the stones. Make them brown in a little butter. Sprinkle with sugar to caramelize and reserve them. Cut the brioche slice into 4 cubes. Beat the egg with a fork with the milk and vanilla sugar. Dip the cubes into the mixture and brown them in a pan with a little butter. Place a half apricot on each piece of brioche. Sprinkle with almonds and serve warm.
