Ingredients for the biscuit:
2 egg yolks • 2 egg whites • 1 whole egg • 75 g sugar • 40 g almond powder • 40 g flour. For the cream: 300 cl of milk • 30 cl of cream • 3 egg yolks • 60 g of caster sugar • 15 g of flour • 15 g of cornflour • 100 g of dark chocolate • 35 g of milk chocolate • 100 g butter • 40 g praline.
For the syrup:
10 cl of water • 40 g of caster sugar • 1 vanilla pod.


For the biscuit: put the 2 yolks and the whole egg for 15 minutes then add the almond powder. Put the 2 whites in snow with the sugar. Mix half with the yolks. Add the flour and mix.
Finish by gently incorporating the remaining whites into snow. Spread the dough on a baking sheet lined with parchment paper. Bake at 210 ° C (th.7) for 6 minutes. At the end of the oven, turn the dough over a damp cloth. Remove the parchment paper and wrap the biscuit in the cloth.
Heat the water with the sugar and split vanilla pod. Let cool, then unroll the cake and soak it with this syrup.
Prepare the cream: heat the milk over low heat. Beat the egg yolks with the sugar, flour and cornflour until the mixture whitens. Add a little warm milk and pour the mixture into the milk pan. Heat over low heat until thickened, stirring regularly.
At the end of cooking, add the butter in pieces, the two melted chocolates and the praline. Mix well and let cool.
Spread the chocolate cream on the rolled biscuit and roll it again. Cut off the ends of the log and decorate with the remaining cream and a little grated dark chocolate.
